Recipe of the week: Burnt Sugar Cake

Burnt Sugar Syrup

Put 1 ½ cups sugar in a heavy pan. Cook over low heat, stirring constantly, until melted and brown. Add ½ cup water and continue to cook until lumps are dissolved. Let cool before using.

 

Burnt Sugar Cake

Ingredients

½ cup butter

1 cup sugar

3 eggs – separated

2 ¼ cups flour

3 teaspoons baking powder

1 teaspoon salt

¾ cup cold water

4 tablespoons burnt sugar syrup

Cream butter and sugar. Add well beaten egg yolks and stir thoroughly. Sift together dry ingredients. Add water and burnt sugar syrup. Beat thoroughly. Fold in stiffly beaten egg whites. Divide batter in two greased and floured layer pans. Bake at 375 degrees for 25 to 30 minutes. Cool.

 

Burnt Sugar Frosting

Ingredients

6 tablespoons burnt sugar syrup

4 tablespoons butter

3 cups confectioners sugar

1 teaspoon vanilla

 

Heat butter and syrup until butter is melted. Beat in sugar and vanilla until frosting is of a good spreading consistency.
